Wood Origin - French Oak: Quercus Sessilus; American oak: Quercus Alba
Wood Characteristics - Heart of the wood (duramen) i.e. no sap wood & no bark. Origin - tight to medium grain oak.
Granulometry - Medium particles (approx 10x5x3 mm).
Convex toasting - Convection oven with integrated automatic gauge.
Toasting gradients - Medium, Medium+.
Oenological benefits - Use on white wine: during fermentation for structure & volume, during aging for contribution to aromas. Use on finished red wine for phenolic & aromatic contribution (vanilla, coconut, almonds, woody, & toasted flavours).
Characteristics of product: Gradual penetration of the wine into the wood & extraction of phenolic & aromatic components in approx. 3 to 6 weeks.
Use - 1.5-4g/L during primary fermentation, malo-lactic fermentation, or aging to increase complexity, aroma, and tannin structure. Chip addition during fermentation also aids with colour stability.
Comes in 10kg mesh bags, outer packaging is tin foil bags to retain freshness.
